Lagoon- it's what fun is!


We are loving our time in Utah this summer! It has been non-stop PLAY!
I seriously have lost count of the fun adventures we've been on!
The other day we surprised the kids with a day at Utah's main amusement park, Lagoon! They were surprised and of course so excited! The park was pretty empty, so we walked onto most of the rides- yay!!! The kids begged to play some games as well, to earn a $2 stuffed animal, but me, I HATE spending money on those games. Here is where Grandma comes in to save the day- all four kids got to play two games, which allowed them all to win two stuffed animals! Kids=😃!!! 
I LOVE my kids, but boy am I learning how much I dislike stuffed animals (unless they are Scentsy Buddies)! 

Anyways, we only have a couple more weeks left in Utah- so we've got to do as much as we can before heading back home to Arizona!

My top 3 priorities!

 See these three kids? They are my world! Before I had them, they were in my heart, begging for me to let them out for the world to see! They are my biggest dreams come true!
These kids are my life- and I want to live that life so they will always know it, and never question where my priorities were. When they look back in life, I want my children to say, "I knew not everything, but that my Mom loved me most"! I am not perfect, I'm really far from it, but I HAVE to keep trying to be the best Mom I can be! THIS brings me so much happiness and fulfillment!
So this week I've taken a big step back on the ME, part of my life. My life seemed to focus more on me- "what exercise was I going to do today, what food was I going to eat, WHEN was I going eat, when would I go to bed, when would I have a nap, when would I get to rest....I....I....me....me....", it was getting old, and something I felt deep down in my heart it needed to stop.
I need to take care of myself, I totally agree that you first need to put on your oxygen mask, but once that mask is on, you need to focus on your kids!
So this week, I tried something new- I put my "mask" on first thing in the morning, this mask is all the things that are important for me to feel personally fulfilled and doing "my best". Once I get that on (done for the day), I can focus on my kids. YES, some days I have to wake up at 4am to make sure I get my "mask" on, but man do I feel better once it's done.
So here is to family, play, and making each day count!

Day 6- 21-Day Sugar Detox Recap

Today was a pretty good day! I didn't have any major ups or downs, it was just a good day- I can't complain!

Pre-Workout snack- tablespoon of almond butter and a chunk of roast beef. It wasn't the most awesome combo but I just needed some fat and protein to get me ready to run!
Breakfast- Kale & Mushroom quiche and pumpkin "nut" meal- which is the new name to my new favorite sugar free Paleo meal. I think I've made this recipe even more easy for everyone to copy, here ya go:
1/4 c. Pecans
1/4 c. Slivered Almonds
1/4 c. Coconut milk
1/4 c. Pumpkin purée
1/2 frozen banana
Mix all ingredients in blender until blended to a slightly chunky consistency. Put into a small bowl and microwave for 1-2 minutes. Add cinnamon on top! Yummy!
Lunch- tuna & avocado lettuce wraps.
Snack- Coco-Nut Banana smoothie.
This included:
1 c. Coconut milk
2 tablespoons of almond butter
1/2 frozen banana
4-5 ice-cubes
1 handful of baby spinach
This smoothie was very filling and could probably be a meal than a snack.
Dinner- leftover roast beef and onions.

Exercise today was a 6 mile run.

Best part of my day- bedtime! My hubby was gone tonight so everything was on me to get homework done, cook dinner, feed kids, bathe kids and get kids to bed. Needless to say, my best moment was when they all were in bed!

Today I am thankful for our freedom to vote! Today was Election Day- and I totally rocked the vote! I hope you did too!

Paleo- Whole 30 Day Day 17 & 18

Day 17
Today was a busy day. My oldest, finished 1st grade today. So she and I had a morning together, having a party at her school, then off to do some shopping. Now that School is officially over, I'm not sure what to do all day with my 3 kids. I really need to make a Summer Schedule. One thing for sure, I'll be using my membership at the YMCA a lot more! The kids and I will need to have some daily 'away' time from each other. 
Breakfast was a mixture of things found in my fridge- eggs, chicken sausage, spinach, tomato and avocado. 
I tend to eat leftovers, or anything that is going to spoil soon. I LOVE leftover, and think it's a MUST for any healthy lifestyle. My kids, my work (Scentsy & Velata), my workouts, my hubby, my house, and Church- all these things take a lot of time, so I have to have easily accessible foods. I promise, anyone can eat healthy, it's just about preparation and dedication! Anyways, off the soapbox!
My Daughter is so beautiful, don't ya agree!?!? She looks just like her Daddy! I married a handsome man!
With all the shopping she and I were doing, I was getting really hungry. So I ended up having a huge salad at our local grocery store. I was grateful they had healthy options! 

Dinner was another HUGE salad at home, with Grilled Chicken, avocado, peppers, tomatoes and my favorite dressing- homemade mayo mixed with red wine vinegar. 
Have I told you how much I LOVE Instagram? I'm starting to meet some really amazing people that are doing the same things that I am trying to do. Most of these people are Pro's compared to me; I look up to them so much! One girl, HungryFitness posted this Instagram photo, and I had to share- it's the basics of what the WHOLE30 plan is all about. She is starting her Whole30 tomorrow! 

My exercise today was Crossfit and Hot Yoga. Crossfit was hard, I did some dead lifts, mostly working on proper form today, and then did jump rope and box jumps for 8 minutes (4 reps), with a 20 second rest in between each rep. I had a massive headache once I started doing the box jumps. I am not sure if I need more water, or a better Pre-Workout meal. Any ideas? I would love not to have that headache again- OUCH!

Day 18
Our first official day of Summer Break! The kids and I will eventually get this schedule down, today was better, but still it was a lot of fighting with each other and TV time...bad Mommy! Tomorrow we will work on being more productive! 
Breakfast was Ginger Eggs- which I've ate a million times now, and still love them! 
Lunch was a Salad with leftover grilled chicken and a couple pieces of chicken sausage. I know a lot of my pictures are starting to get boring...I eat so much of the same thing. So I am going to challenge myself to get lots of new things made for next week- I promise!

We had swim lessons tonight, so we were going to be getting back home pretty late, I knew my body would be hurting for fuel, so before we left I had a snack of an apple and a couple tablespoons of almond butter. This is one of my favorite snacks! I feel evil eating it, but then I know it's all real food that my body needs.
Dinner was Chicken Curry! I've made this also before, and my family and I love it. My family eats theirs with Jasmine Rice, but I have mine just plain. It is totally delish! 
I have a stomach ache tonight, so I need to get some good rest and hope it's gone in the morning.
